Always use fresh, cold water. The best quality water makes the best tea, so if you have good filtered water, use that.
The best way to heat tea water is by using an electric kettle. Alternatively, heat water on stovetop. We do not recommend microwave-heated water.
On average, use one teaspoon of loose tea leaves per 8 ounce cup or per 1 – 2 cup teapot. Some stronger teas may require less, but this is a matter of preference.
Loose tea leaves should be placed into an infusing device such as a tea ball infuser-strainer or disposable T-sac and then into teapot or cup. One may place loose leaves directly into brewing vessel but this will require a strainer to pour. The advantage of an infusing device is that you can re-steep any quality tea more than once.
Always pour boiling water over infuser/leaves instead of placing them into the water.
Allow tea to “draw” or “steep” for the required time suggested below. Over-steeping will cause black teas to taste bitter, just as water which is too hot may affect the taste of a green or white tea.
Suggested water temperature & steeping times:
Black Tea: Heat water until boiling, 212 F. Steep for 3 - 5 minutes
Pu’erh Tea: Heat water until boiling, 212 F. Steep for 5 - 10 minutes, according to taste
Green Tea: Heat water until steam rises, 180 F. Steep for 2 to 3 minutes
Oolong Tea: Heat water until steaming briskly, 200 F. Steep for 2 minutes
White Tea: Heat water until steaming briskly, 200 degrees F. Steep for 2 minutes
Herbal Tisanes / Rooibos: Heat water until boiling, 212 F. Steep for 5 to 7 minutes
Other Suggestions:
Some black teas are wonderful paired with milk but most teas are meant to be enjoyed without. Do not add milk to green tea or fruit tisanes, as they may curdle. Rooibos is delightful with milk. Pour a little whole milk into the cup first, and then add hot tea.
Taste the tea before sweetening. Sweetener should enhance the flavor, not overpower it. The same applies to lemon juice.
Once you have enjoyed your tea, re-steep as many times as the tea permits. Generally a good green or black tea will yield 2 or 3 steeps, sometimes four. Most fruit tisanes are good for one steep only. Other herbals such as Peppermint and Rooibos, are more yielding and will grant 3 or 4 steeps.
To further enhance your tea brewing experience, acquire the best brewing equipment and enjoy in a favorite teapot, teacup and saucer. Tea just tastes better in fine China !
Swirl hot water around in your teapot and cup then discard, thus heating them before brewing and pouring your tea.
